BROILED PEPPERS RELLENOS 
12 fresh sweet banana peppers, halved, lengthwise & seeded
1/2 c. cheddar cheese, shredded
1/4 c. mayonnaise
2 tbsp. green onions, sliced
2 egg whites, stiffly beaten

Cook peppers in boiling water for 3 minutes or until tender; drain. Place on cold broiler rack. Stir together half of the cheese, the mayonnaise and green onion; fold in egg whites. Spoon mixture into peppers, spreading to cover edges. Sprinkle peppers with remaining cheese. Broil 5" to 6" from heat for 3 to 5 minutes or until cheese is melted. Makes 6 to 8 servings.
