KEY LIME PIE 
1 BAKED pie crust
4 egg yolks
1/2 c. sugar
1/2 c. lime juice
1/2 tsp. salt
1 tbsp. gelatin -- softened in 1/2 c. cold water
2 tsp. angostura bitters
Rind of 1 lime, grated
4 egg whites, stiffly beaten
1/2 c. sugar
Whipped cream

Beat egg yolks, add sugar, lime juice and salt. Cook in a double boiler until it coats a spoon. Remove from the stove and add gelatin, bitters, and rind. Mix well. Cool until it thickens. Fold in egg whites. Pour into the baked pie crust. Cool for several hours. Top with whipped cream when serving. 8 servings.
