LATTICE TOP APPLE PIE 
2 c. flour
1 tsp. salt
3/4 c. shortening
6 tbsp. water

Sift together flour and salt; blend in shortening, using pastry blender, or knife. Add cold water a tablespoon at a time until moistened. Divide in 2 parts. Roll out bottom crust and put in pie pan. Roll out remainder in rectangle; cut in 8 strips. Brush pastry with melted butter and a mix of 1/4 cup sugar, 1/8 teaspoon vanilla, and 1 tablespoon cinnamon. Press lightly on to pastry strips.

APPLE FILLING:

6 tart apples, peeled and sliced
3/4 c. apple cider or juice (reserve 2 tbsp.)
3/4 c. sugar
1 tsp. cinnamon
2 tbsp. cornstarch

Put apple slices, cider, sugar, and cinnamon in large sauce pan. Bring to a boil over medium heat, stirring occasionally. Mix cornstarch with reserved liquid. Add to mixture and stir until thick and clear. Remove to room temperature stirring 2 or 3 times. Place mixture in pie crust; top with sugared pastry strips. Bake at 350 degrees 35 to 45 minutes.
