MICROWAVE OKRA AND TOMATOES 
1 lb. okra
1/4 c. chopped onion
1/4 c. chopped green pepper
1/2 c. water
4 med. size ripe tomatoes, peeled, seeded, and coarsely chopped
1 tsp. sugar
3/4 tsp. salt
1/4 tsp. pepper

Wash okra; remove stems and cut pods into 1/2 inch slices. Combine okra, onion, green pepper, and water in a 2 quart casserole; stir well. Cover with heavy duty plastic wrap and microwave at high for 9 to 10 minutes or until okra is tender, stirring every 3 minutes. Drain well. Add tomatoes, sugar, salt, and pepper to okra mixture; mix well. Cover and microwave at high for 3 minutes. Serve immediately. Yield: 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
