MICROWAVE ZUCCHINI AND TOMATOES 
4-6 med. zucchini, sliced
1-2 med. fresh tomatoes, sliced
1 med. onion sliced
Salt and pepper to taste
1/4 tsp. garlic salt
2/3 c. grated Provolone cheese (can be substituted with other cheese)
1/4 c. grated Parmesan cheese

Make a layer using 1/2 of zucchini on bottom of baking dish. Make a layer using 1/2 of tomatoes and then 1/2 of onions. Sprinkle 1/2 of salt, pepper, and garlic salt over vegetables. Overlay with 1/2 of the grated Provolone cheese.

Make second layer of ingredients and then sprinkle the 1/4 cup Parmesan cheese on top. Microwave on high 15 minutes, turning once. Yield: 6-8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
