MUSHROOM OLIVE SALAD | |
1 tsp. salt 1 tbsp. water 1 clove garlic, minced 2/3 c. salad oil 1/4 c. vinegar 2 tsp. lemon juice 1 tsp. sugar 1/2 each dry mustard, rosemary & Worcestershire 1 can (4 oz.) button mushrooms, drained 1 med. head lettuce, torn in shreds 1/2 c. sliced celery 3 green onions & tops, chopped 1 tbsp. minced parsley 1/4 c. stuffed green olives, sliced Dissolve salt in water; add garlic and let stand for at least 30 minutes; stir occasionally. Mix together the salad oil, vinegar, lemon juice, sugar, mustard, rosemary, Worcestershire sauce and drained mushrooms. Strain garlic and add garlic water to dressing. Let stand 20 minutes. Remove mushrooms and arrange with lettuce, celery, onions, parsley and olives in a bowl. Pour dressing over and toss lightly. Serves 6. |
