CARROT PUDDING 
2 raw grated carrots
1 1/2 c. Crisco
1 c. brown sugar
4 egg yolks
2 1/2 c. flour
2 tbsp. orange juice and rinds
4 egg whites, beaten
2 tsp. baking powder
1 tsp. salt
1 tsp. water
2 tsp. vanilla
2 tbsp. lemon juice and rinds

Cream Crisco, brown sugar, sifted flour, salt, baking powder. Add egg yolks to creamed mixture. Add flour alternating with juice and rinds. Add water, vanilla to grated carrots. Fold in egg whites. Put in greased large mold. Bake at 350 degrees for 45 to 50 minutes.
