CHILLED SHRIMP WITH SPINACH
SAUCE
 
1 lb. fresh or frozen shelled shrimp
Spinach Sauce
Lemon wedges
Cherry tomatoes, optional
Lettuce leaves

Cook fresh or frozen shrimp in boiling salted water for 1-3 minutes or until pink. Drain; chill at least 2 hours. Prepare Spinach Sauce. Cover and chill in refrigerator. At serving time, arrange chilled shrimp, lemon wedges and cherry tomatoes on lettuce on plate. Serve with Spinach Sauce. Makes 8 servings.

SPINACH SAUCE:

Combine in a blender: 1/3 c. dairy sour cream 1/4 c. snipped parsley 1/4 c. frozen chopped spinach, thawed & well drained 1 tbsp. lemon juice 1 tbsp. water 1/4 tsp. dried tarragon, crushed 1/8 tsp. garlic salt

Cover and blend until smooth. Cover; chill until serving time. Makes 1 cup.
