ZUCCHINI CUSTARD CASSEROLE 
4 to 5 c. grated zucchini (packed)
1-3/4 tsp. salt
1 c. shredded cheese
1/8 tsp. pepper
1/8 tsp. garlic powder
1/4 c. chopped parsley
1/4 c. biscuit mix
4 eggs, beaten

Salt grated zucchini and allow to stand 1 hour. Turn into colander and press liquid out. Combine with 1 cup shredded cheese and seasonings. Add biscuit mix and beaten eggs. Melt 1 tablespoon butter in skillet or casserole. Cook uncovered in microwave for 10 minutes. Stir halfway through cooking. May place in a pan of hot water and bake in a conventional oven at 350 degrees about 45 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
