CASHEW NUT COOKIES 
1/2 c. butter, softened
1 c. firmly packed brown sugar
1 egg
1 tsp. vanilla extract
2 c. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt (opt.)
1/2 c. sour cream
1 1/2 c. chopped cashews or pecans

Combine butter, sugar, egg and vanilla in a large mixing bowl. Beat at medium speed, 1 to 2 minutes or until smooth.

Combine dry ingredients. Add to butter mixture, alternating with sour cream. Beat with wooden spoon after each addition. Stir in nuts. Drop dough by tablespoons onto ungreased cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until lightly browned. Yield 4 dozen.
