NUT ROLLED COOKIES 
1 c. sugar
1 c. shortening
1 c. milk
5 to 6 c. flour
4 egg yolks
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

NUT FILLING:

1 1/2 lbs. ground nuts
1/4 lb. butter
1 1/2 c. sugar
4 egg whites

ICING:

2 c. confectioners' sugar
2 tbsp. milk
1 tbsp. butter or shortening
1/4 tsp. vanilla
1/2 lb. ground nuts (opt.)

Mix shortening, sugar and egg yolks. Add milk. Slowly add dry ingredients. Add vanilla. Dough should be soft and easy to handle. Make 6 balls with dough. Roll out on a floured board, long and narrow.

To make nut filling, melt butter, cool. Add sugar, nuts and lightly beaten egg whites. Spread filling on dough and roll up like a nut roll, seal ends. Cut into 1 inch pieces. Place on greased cookie sheet, stand cookie up - do not lay it down. Bake at 350 degrees for 10 to 12 minutes.

Ice the cookies when cool. To make icing, cream butter or shortening. Add vanilla slowly. Blend in sugar, add milk. Add nuts, if desired. Makes over 100.
