SQUASH TORTE 
6 med. squash, cubed & parboiled
1/2 c. olive oil
A little butter
3 tbsp. chopped parsley
1/2 clove garlic, minced
1 sm. onion, chopped fine
Good pinch of oregano
1/2 lb. ground meat
3 eggs, beaten
1 c. bread crumbs (sweet French bread)
1 c. Parmesan cheese

Cook together the meat, onion and garlic; cook but do not brown. Add remaining ingredients; salt and pepper to taste. Bake at 325 degrees for 30 minutes in well oiled baking dish, cut into squares. Serve warm or cold.
