FROZEN WALDORF 
2 eggs, beaten
1/2 c. sugar
1/2 c. pineapple juice
1/4 c. fresh lemon juice
1/2 c. broken walnuts or pecans
1/8 tsp. salt
1/2 c. diced celery
1/2 c. crushed pineapple, drained
2 med. apples, diced
1 c. whipped cream or Cool Whip

Combine eggs, sugar, juices, and salt. Stirring constantly (A MUST), cook over low heat until thickened. Cool mixture. Add celery, pineapple, apple, nuts and fold in whipped cream. Spoon into 8-inch square pan and freeze. Cut into squares and serve on lettuce leaves.
