BRUSCETTA 
4 Roma tomatoes, diced
1 garlic clove, minced
1/4 c. extra-virgin olive oil
2 tbsp. chopped fresh basil
1 tsp. salt
Freshly ground pepper to taste
1 loaf Italian bread, cut into 1/2 inch slices
Olive oil for brushing
Parmesan cheese (optional)

Combine tomatoes, garlic, olive oil, basil, salt and pepper in small mixing bowl. Set aside at room temperature for 1 hour or longer before use. (I leave it in refrigerator overnight).

Preheat grill or toaster oven. Brush olive oil on bread and grill until golden and toasty on both sides. Spoon chopped tomatoes on bread and serve. Sprinkle (if desired) with fresh Parmesan cheese. Makes 6 servings.
