CORNBREAD QUICHE 
1 lb. ground beef
1 pkg. taco seasoning mix
1 can creamed corn
1 can whole kernel corn, drained
1 lg. onion, chopped
1/2 lb. sliced Colby cheese
1 1/4 c. cornmeal
1 tsp. salt
1/2 c. oil
2 eggs
1 tsp. baking soda
1 c. milk

Brown ground beef and taco mix in skillet. Set aside. To make cornbread, mix dry ingredients, oil, eggs and vegetables until well blended. Pour 1/2 of mixture into a 9 x 13 inch greased pan or a greased 10 inch iron skillet. Cover mixture with sliced cheese. Layer with browned ground beef mixture. Top with remaining batter. Bake in 350 degree oven for 1 hour. Serves 10.

NOTE: May substitute cornbread ingredients with two boxes of Jiffy cornbread mix prepared according to package directions.
