ENGLISH ROAST POTATOES 
Choose one potato per serving. Peel the potatoes. Cut them into 3 inch cubes and boil for 15 minutes. In a heavy skillet, heat 1/4 inch oil. Add hot potatoes to fat and coat on all sides. Place in a 400 degree oven and bake uncovered for about 1 hour or until potatoes are golden brown on all sides. Keep them turned and well basted with oil as they cook.
