MOCK ARMENIAN SALAD 
Lg. head lettuce
Sm. head cabbage
1/2 lb. sharp cheese
1 c. chopped onions
1/4 c. parsley
3 med. tomatoes
1 c. brine (from olives)
2 c. diced ham (boiled)
16 oz. Feta (or cottage) cheese
6-8 oz. ripe olives
1 c. 1/2 peeled radishes
3 stalks celery (no leaves)
Garlic salt
Black pepper
Olive oil
Wooden bowl

Wipe inside of wooden bowl with olive oil. Tear up lettuce, chop cabbage head, and mix in bowl. Cube the tomatoes, radishes, and add all remaining ingredients to the bowl. Tumble until mixed. Sprinkle brine over the mass. Add garlic salt and pepper to taste (the more the better). DO NOT STIR! Serves 8-12.

Prepare just before eating. Refrigerate covered. Let garlic salt cling to the top layer - it will mix when served.
