GERMAN POTATO SALAD 
2 1/2 lbs. potatoes
1 tbsp. flour
1/2 c. vinegar
3/4 tsp. sugar
2 tsp. chopped parsley
5 slices bacon pan broil
1/2 c. water
2 tsp. salt
1 onion, sliced thin

Scrub and cook potatoes in boiling salt water. Leave skins on. Pan broil bacon. Crumble bacon when done. With remaining bacon grease add flour to it. Gradually stir in water and vinegar. Cook, stirring constantly until mixture boils and thickens. Add salt, sugar and thinly sliced onion. Peel and dice hot potatoes, add bacon and pour on the hot dressing. Mix lightly and add parsley, serve hot.
