RHUBARB CAKE | |
1 1/2 c. sugar 1/2 c. shortening or butter 1 egg 1 tsp. baking soda 1 c. sour milk 2 c. flour 1 tsp. vanilla 1/4 tsp. salt 1 1/2-2 c. rhubarb, cut up Cream sugar, shortening and eggs in large mixing bowl. Add remaining ingredients and beat well. Stir in rhubarb and spread in greased 9 x 13 inch pan. Sprinkle with 1/4-1/2 cup sugar mixed with 1-2 teaspoon cinnamon (1/2 cup ground walnuts in sugar topping is optional). Bake at 350 degrees for 40 minutes. |
