PENUCHE CAKE 
1 1/3 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 c. butter
1 c. brown sugar
1 whole egg and 1 egg yolk
1/2 c. sour milk

FROSTING:

1 egg white
1/2 c. brown sugar
1/2 c. pecans

Cream butter and sugar, add eggs and beat well. Sift flour before measuring. Sift flour, salt, soda, baking powder, and cinnamon together. Add alternately with sour milk. Pour into a well-greased and floured 8x8 inch pan.

Cover with meringue made by adding brown sugar gradually to stiffly beaten egg white. Sprinkle pecans on top. Bake in a very moderate oven at 325 degrees for 45 minutes.
