REBECCA'S CHOCOLATE CHIP COOKIES 
1 c. butter
3/4 c. granulated sugar
3/4 c. brown sugar, packed
1 egg
2 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt (opt.)
1 c. coarsely chopped nuts (opt.)
1 pkg. (12 oz.) semi-sweet chocolate chips (we use President's Choice jumbo chips from National)

Heat oven to 375 degrees. Mix butter, sugars and egg. Stir in flour, baking soda and salt. Stir in chips. Drop dough by rounded teaspoons onto ungreased cookie sheet. Bake until light brown, approximately 8 minutes. Cool on newspaper.

NOTE: Rebecca says the trick is to take the cookies out BEFORE they look done; that way they stay chewy. Eight minutes does it in our oven - time varies from oven to oven. 3 to 4 dozen cookies.
