HONEY - MUSTARD CHICKEN 
1 (2 1/2 lb.) chicken
1 tsp. poultry seasoning
Freshly ground black pepper to taste
1/2 c. honey
1/4 c. prepared mustard
2 green onions, thinly sliced
1 tsp. dried thyme
1/4 tsp. cayenne pepper OR
1 sm. Scotch bonnet pepper, seeded, finely minced

Heat oven to 350 degrees. Cut chicken into serving pieces. Using tip of small knife, loosen chicken skin; remove and discard. Rinse chicken with cold water and pat dry with paper towel.

Rub chicken with poultry seasoning and black pepper; arrange in single layer in 3-quart baking dish coated with non-stick spray. Cover with foil; bake 20 minutes.

Meanwhile, in medium-size bowl combine remaining ingredients; stir until well mixed. Carefully remove foil, avoiding steam. Turn chicken and brush generously with about half the honey mixture.
