CHICKEN CORDON BLEU 
4 chicken breasts, cut in half and boned
2 eggs, slightly beaten
Cracker crumbs
8 slices boiled ham
8 slices Swiss cheese
1/2 lb. butter
3/4 c. white wine

Preheat oven to 350 degrees. Pound chicken with mallet and sprinkle with salt and pepper. Place one slice of ham and cheese on each breast and roll-tie with string. Dip cracker crumbs, then egg, then cracker crumbs. Brown in butter and put in baking dish. Pour remaining butter and wine over. Bake 1 hour at 350 degrees.
