SPINACH TART CASSEROLE 
2 (10 oz.) pkgs. frozen, chopped spinach, thawed and squeezed as dry as possible
1 packet Lipton's onion soup mix
1 egg, lightly beaten
3 oz. part skim Ricotta cheese
1/2 c. sour cream
1 sm. tomato, sliced for topping

Preheat oven to 350 degrees. In food processor or blender, combine all ingredients thoroughly, except tomato. Pour into 9 inch round casserole dish. Bake 45 minutes or until firm. Serve topped with sliced tomato.

Makes 4 servings.
