SCALLOPED POTATOES AND PORK
CHOPS
 
6 Pork Chops
2 tbsp. Oil
Salt & Pepper to taste
3 tbsp. Butter
2 tbsp. Flour
1 1/2 tsp. Salt
1/2 tsp. Pepper
2 Chicken Bouillon Cubes
6 Cups Sliced Potatoes
1 Medium Onion sliced & separated into rings

Brown chops in hot oil on both sides, salt and pepper to taste.

In saucepan, melt butter; stir in flour, chicken bouillon and water. Cook and stir over medium heat until mixture comes to a boil. Place potatoes in bottom of 9x12 baking dish. Top with onion rings. Pour chicken broth over potatoes and top with chops.

Bake 350°F, covered 1 hour, then uncovered another 30 minutes.
