CHICKEN MOZZARELLA 
8 whole chicken breasts, boned & skinned & cut into strips
4-6 eggs, beaten
Salt & pepper to taste
2 c. bread crumbs
1/2 - 1 c. butter or vegetable oil
1 lb. fresh mushrooms, sliced
1 (8 oz.) pkg. Mozzarella cheese, sliced
1 (13 oz.) can chicken broth

Let chicken stand in beaten eggs. Salt and pepper for 5 hours or overnight. Roll in bread crumbs and fry in butter or oil about 3 to 4 minutes, or until golden brown. Place chicken in casserole. Top with mushrooms and cheese. Pour broth over all and bake at 350 degrees for 1/2 hour, covered, and 1/2 hour, uncovered. 16 servings.
