SQUASH FRITTERS 
3 c. grated squash (about 2-3 med.)
1 c. Bisquick
1 egg
1 sm. onion, grated
Salt and pepper to taste

Mix all ingredients until moistened. Heat 2 tablespoons oil or butter in a large fry pan. Drop batter by large spoonsful into hot fat; brown; turn; brown second side. Lower heat and cook 5-10 minutes longer, until done. Makes 6-8 3- inch fritters.
