MUSHROOM QUICHE 
1/2 c. evaporated milk
1 egg
1/2 c. sliced fresh mushrooms
1 tbsp. chopped chives
Dash of pepper and nutmeg
1/8 tsp. salt
1 slice Swiss cheese, diced
1 tsp. melted butter

Beat egg and milk. Add remaining ingredients and beat well. Pour into a quiche pan or approximately 6-inch diameter dish. Bake at 350 degrees for 30 minutes. Makes 1 servings.
