WILLIAMSBURG RICE PUDDING 
4 eggs
3/4 c. sugar
2 c. milk
1 1/2 c. cooked rice (not instant)
1 1/2 tsp. lemon juice
1 1/2 tsp. vanilla
1/2 tsp. nutmeg
1 tbsp. butter
2/3 c. raisins

Grease a 2 quart square Pyrex or Corningware dish. Combine eggs, sugar, milk and beat well. Add remaining ingredients, stir well. Pour into pan. Place the dish in a pan of boiling water and bake in oven at 350 degrees for 45 minutes. Custard will come to the top when in oven for 5 minutes. Stir once.
