SNICKERDOODLE COOKIES 
2 3/4 c. all-purpose flour
2 tsp. cream of tartar
1 tsp. baking soda
1/2 tsp. salt
1 c. shortening
1 1/2 c. sugar
1/4 c. sugar
2 eggs
1 tsp. vanilla
2 tsp. cinnamon

Preheat oven 375. Sift together flour, cream of tartar, baking soda and salt. Set aside.

In large bowl with electric mixer, beat shortening until creamy. Gradually beat in 1 1/2 cups of sugar until light. Beat in eggs and vanilla. Gradually beat in flour mixture.

In small bowl, combine the 1/4 cup sugar and cinnamon. Roll dough into 1 inch balls. Roll balls into sugar and cinnamon mixture. Bake on ungreased cookie sheet.
