GREEN RICE/CHICKEN CASSEROLE 
1 lb. chicken (skinned and boned)
1/2 to 1 c. chopped onion
1/2 to 1 c. chopped celery
1 c. Minute rice
1 c. chicken broth
1 (10 oz.) box frozen chopped broccoli
1 can cream of chicken soup
1 sm. can mushrooms
1 sm. jar pimentos
1 can sliced water chestnuts
1 (8 oz.) jar cheese whiz

Cook chicken, bone and skin set aside. Cook 1 cup Minute Rice in 1 cup chicken broth. Cook frozen chopped broccoli per directions. Saute onions and celery in butter until soft. Using 6 quart casserole dish, pour rice, broccoli and sauteed onions and celery. Add all other ingredients except chicken. (Cheese whiz may be placed in microwave for 45 seconds to facilitate mixing.) Add chicken last by tearing into small pieces. Salt and pepper to taste and mix. Heat in 350 degree oven until hot for 20 to 25 minutes. Serve.

This casserole is very filling and can be served with only bread or salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
