POTATO SALAD | |
1 qt. Florida potatoes 1 tbsp. olive oil 2 tbsp. wine vinegar 1 onion 2 stalks celery 1 tbsp. chopped parsley 1/2 c. thin mayonnaise Lettuce and lemon (for garnish) Paprika Boil potatoes until done, but not soft. Allow to cool and then cut into small pieces or slices. Add oil and vinegar. Chop onion and celery very fine, and add, with parsley. Salt and pepper to taste. Pour the thin mayonnaise over all mixing thoroughly with a wooden spoon. Garnish with lettuce and a few pieces of lemon. (Second place winner in the state of Florida Potato Festival, May 19, 20, 21, 1989, at St. Augustine, Florida). |
