PINEAPPLE FILLING:

1/2 c. sugar
1/8 tsp. salt
6 tbsp. flour
1 (20 oz.) can crushed pineapple
3 beaten eggs
1 1/4 c. whole milk
3 tbsp. butter

Mix above ingredients well and pour into double boiler. Stir constantly until it becomes a thick pudding. Pour into a baked pie shell. Top with Cool Whip or Dream Whip.

Serves 8.
