FISH OMELET 
2 pkgs. cod fish fillets
3/4 of 1/4 lb. butter
1 c. milk
3 eggs, separated
1/2 c. flour
1/2 tsp. salt
Sprinkle of pepper
1/4 tsp. nutmeg

Boil fish 20 minutes, cool and remove bones and flake. Set aside.

Cream butter, add fish, mix well. Add salt, flour, nutmeg, pepper. Add egg yolks to milk, mix well. Add milk mixture to flour and fish mixture. Fold in stiffly beaten egg whites. Bake at 350 degrees for 45 minutes or until golden brown on top.
