NEWPORT FISH SHORTCAKE 
3 tbsp. onion, chopped fine
4 tbsp. butter
3 tbsp. all-purpose flour
2 c. hot milk
Pinch ground allspice
Pinch cayenne pepper
1/8 tsp. freshly grated nutmeg
Salt & ground white pepper
1/3 c. grated, med. sharp cheddar cheese
1 lb. flaked, cooked haddock or ling cod
Chopped fresh parsley
Buttermilk biscuits

Cook the onions in butter in a medium saucepan over low heat until tender, about 8 minutes. Stir in flour; cook, stirring constantly for 2 minutes. Whisk in hot milk. Simmer until thickened, about 10 minutes. Season sauce with allspice, cayenne pepper, nutmeg and salt and white pepper to taste. Stir in cheese and fish. Cook until warmed through, about 3 minutes. Sprinkle with parsley. Serve over buttermilk biscuits, split in half.
