SHERBET COOKIE WICHES 
1 qt. orange sherbet, softened
3/4 c. miniature semisweet chocolate pieces
1 (8 1/2 oz.) pkg. chocolate wafers

Use a 13 x 9 x 2 inch baking pan, lined with foil. Use a piece of foil large enough to overlap 2 edges of pan.

In a large mixing bowl, with a wooden spoon, stir softened sherbet and chocolate pieces. Using the wooden spoon transfer sherbet mixture to foil lined pan; spread evenly. Freeze 4 to 6 hours.

Using a circle cookie cutter, cut out 15 sherbet circles. Place sherbet circles between two wafers. Keep frozen until time to eat. Makes 15 cookiewiches.
