SALMON CROQUETTES 
No. 1:
1 3/4 c. flaked cooked salmon
1 c. Thick White sauce
Salt & pepper
Cayenne
1 tsp. lemon juice
Crumbs and egg

Combine salmon, white sauce, seasoning and lemon juice. Chill and shape. Roll in fine crumbs, then in egg and again in crumbs and fry in hot deep fat (380 degrees) 3 to 5 minutes. Drain. Makes 6 croquettes.

No. 2:
1 c. hot mashed potatoes
1 c. flaked salmon
Salt & pepper
1 tsp. lemon juice
Crumbs and egg

Combine potatoes and salmon. Season with salt, pepper and lemon juice. Shape, roll in crumbs, then in egg and again in crumbs and fry in hot deep fat (380 degrees) 3 to 5 minutes. Drain. Makes 4 croquettes. Any fish desired may be used instead of salmon.
