APPLE CAKE 
4 eggs
1 c. sugar
1 c. salad oil
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. vanilla
4 apples (any kind), peeled and sliced 1/4-inch
1 c. chopped nuts

Mix eggs, sugar and oil until bubbling; then mix in flour with a spoon. Add baking powder, salt, cinnamon and vanilla and mix well. Stir in apples and walnuts. Spray or grease a 9 x 13-inch glass baking dish and pour in mixture.

Bake in preheated 350°F oven for 30 to 40 minutes until lightly golden brown.
