FRUIT FRITTERS 
1 c. all-purpose pre-sifted flour
1/2 tsp. salt
1 tsp. baking powder
2 eggs, beaten
1 tbsp. shortening (cooking oil)
1/2 c. milk

Combine salt and baking powder. Combine well beaten eggs, shortening and milk. Mix with flour mixture thoroughly. Fold in fruit - fresh apple slices or canned peaches, apricots, pineapple, etc. (drained and cut into bite size). Drop fruit fritters into 1/2 inch hot cooking oil, 350 degrees. Fry until golden brown. Drain on absorbent paper. Serve with syrup or powdered sugar. Yields 12-15 fritters.
