MAPLE SWEET POTATOES AND APPLES 
6 med. size (approx. 2 lbs.) sweet potatoes
1/2 to 3/4 c. maple syrup
1 to 2 tbsp. lemon juice
4 lg. apples (approx. 1 1/2 lbs.)
1/3 c. buttered crumbs

Butter a 1 1/2 quart baking dish. Wash and cook the sweet potatoes for about 20 to 30 minutes, or until tender when pierced with a fork.

Meanwhile, pour into a saucepan the syrup and lemon juice (start with the lesser quantity and add more after apples are added, according to taste). Wash, quarter, core, peel and somewhat thinly slice the apples. Add the apples to the saucepan and cook over low heat until apples are just tender. Carefully turn apple slices to cook evenly. Remove from heat and set aside. Peel the cooked sweet potatoes and cut into thin crosswise slices. Arrange 1/2 of the potato slices in the baking dish. Then, top with 1/2 of the apple slices and syrup. Repeat these layers with the remaining potatoes, apples and syrup. Sprinkle with the buttered crumbs. Bake at 350 degrees for about 10 minutes, or until the crumbs are lightly browned.
