BAKED GERMAN PANCAKES 
2 eggs
1/8 tsp. sea salt
1 c. whole wheat flour
1 tsp. Brewer's yeast
1/4 c. finely chopped walnuts
1/4 c. brown sugar
1/2 c. milk
1 tbsp. oil
1/2 tsp. soy flour
1 c. pureed, cored, peeled, raw apples
1/8 tsp. nutmeg
1 tbsp. honey or maple syrup

Preheat oven to 450 degrees. Put the eggs, milk, salt, and oil in an electric blender and blend until well mixed. In a bowl, combine the whole wheat flour, soy flour, and Brewer's yeast. Pour in the egg mixture and beat until smooth. Pour into a cold, oiled 9 or 10-inch pie plate. Bake 10 minutes. Reduce oven heat to 350 degrees and bake 10 minutes longer or until done. Combine the remaining ingredients and spread over the top of the pancake.
