CHEESECAKE SUPREME | |
1 1/4 c. graham cracker crumbs 1/4 c. sugar 1/4 c. melted butter 5 (8 oz.) pkgs. cream cheese (room temp.) 1 3/4 c. sugar 3 tbsp. flour 2 tbsp. lemon peel 1 tbsp. orange peel 5 eggs (whole eggs) 2 egg yolks 1/4 c. heavy cream Heat oven to 500 degrees. Work cracker crumbs, sugar and melted butter together. Butter a 9 inch springform pan. Press crumb mixture over bottom and about 2 1/2 inches up the sides. In large bowl of electric mixer, combine cheese, sugar, flour, lemon and orange. Combine on low speed. Add whole eggs and yolks, one at a time, beating after each addition. Add cream and beat until smooth. Pour cheese mixture into prepared pan. Bake 10 minutes. Turn oven to 200 degrees and bake for 1 hour. Remove to cool on wire rack away from drafts. Refrigerate until cold. When cold, remove from pan and place on serving plate. (Can leave on base of pan.) Use toothpick test to check when done. Serves 10. |
