HOT TURKEY SALAD 
2 c. cooked turkey, diced
2 c. celery, finely chopped
1 c. mayonnaise
2 tbsp. onion, grated
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. peanuts or blanched, sliced almonds
1/3 c. potato chips, crushed
1/3 c. sharp cheese, grated

Combine first 8 ingredients. Place in a shallow greased casserole. Top with chips and cheese. Bake at 400 degrees for 20 minutes. Delicious for a main dish or for brunch! Serves 4-6.
