HABICHUELAS GUISADAS | |
1 package dried beans (pinto, red kidney or small red) 1 ham hock salt and pepper to taste 1 packet sazon goya 1/3 cup sofrito goya 1 can tomato sauce 1 tablespoon chopped garlic 1 tablespoon capers or 10 olives with some juice Remove beans from package and check and remove foreign objects. Wash under cold water and let sit in cold salted water for 2 hours. Remove from water and put in pot with enough water to cover beans completely and put in ham hock and cook for 1 1/2 hours. Remove ham hock and let cool. Remove any meat and put in pot and discard bone. In a small pan, add olive oil and sauté garlic for 20 seconds. Then add ingredients above with a little of the bean water and simmer for 10 minutes. Add this mixture to beans and stir. Cook another 15 mins. Let beans sit for 20 or 30 minutes before serving to thicken up naturally. Submitted by: Andy Natal, Torrance California |
