ROASTED POTATO SKINS WITH DIP 
12 baking potatoes
5 scallions, chopped
1 clove garlic
1/3 c. parsley, chopped
3/4 c. mayonnaise
1/2 c. sour cream
1 1/2 tsp. Worcestershire
3 drops Tabasco

Preheat oven to 450 degrees. Peel potatoes lengthwise with a sharp knife taking some of the potato with the skin. Put the strips, skin side up, on a well buttered cookie sheet. Bake 20 minutes until golden. Remove from oven, salt lightly and cool.

Put all remaining ingredients into processor or blender and mix until smooth. Cover and chill. Serve with potato skins at room temperature.
