BREADED FISH AMANDINE 
1 (16 oz.) block frozen fish fillets, thawed
2 tbsp. fine dry bread crumbs
2 tbsp. finely chopped toasted almonds
1 tbsp. snipped parsley
1/8 tsp. paprika
2 tsp. lemon juice
1 tbsp. butter, melted

Cut thawed block of fish crosswise into 4 equal pieces, pat dry. In cereal bowl combine crumbs, almonds, parsley, and paprika. Arrange fillets on small roasting rack placed in 3/4 quart roasting pan. Brush tops of fillets with lemon juice, sprinkle with crumb mixture. Drizzle melted butter over top.

Bake uncovered in 450 degree oven for 17-19 minutes or until fish flakes easily when tested with fork.
