PINEAPPLE ZUCCHINI BREAD | |
3 eggs 1 c. oil 2 c. sugar 2 tsp. vanilla 2 c. shredded zucchini 3 c. flour 2 tsp. baking soda 1/2 tsp. salt 1 1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 (8 oz.) can crushed pineapple, drained 1 c. white raisins 1 c. chopped nuts Beat eggs, oil, sugar, and vanilla. Add zucchini and pineapple. Add all dry ingredients and fold in the raisins and nuts. Bake in 2 loaf pans for 1 hour or 5 small pans for 45 minutes at 350 degrees. |
