MEXICAN MEAT LOAF 
1 lb. ground beef
1/2 c. onions, chopped
1/4 c. bell pepper, chopped
1 can rotel diced tomatoes
1 can cream of mushroom soup
1 can chicken and rice soup
1 pkg. taco seasoning
Cheese, shredded for topping
Tortilla chips

Brown meat, onions, peppers and drain. Combine all other ingredients except the cheese and tortilla chips. Spray a 9 x 13 inch pan with Pam. Line the bottom of pan with a thick layer of tortilla chips. Pour the mixture on top of the chips then top with cheese. Bake at 350 degrees until hot.
