“FAVORITE PUMPKIN CHOCOLATE CHIP MUFFINS” IS IN:

FAVORITE PUMPKIN CHOCOLATE CHIP
MUFFINS
 
1-2/3 c. whole wheat flour
1 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2 lg. eggs
1 c. plain pumpkin (half of 1 lb. can)
1/2 c. (1 stick) melted butter
1/2 to 1 cup slivered or blanched almonds
1 c. (6 oz.) chocolate chips

Mix dry ingredients in large bowl. In another bowl whisk until well blended: eggs, pumpkin and butter. Stir in almonds and chocolate chips. Pour over dry ingredients and fold in until just moistened. Grease muffin cups or use paper baking cups.

Bake at 350°F for 20 to 25 minutes.

Make 1 or 2 days ahead for best flavor.

Makes 12 regular or 48 miniature.

I have been making these muffins forever but I always get compliments on them, and when i brought them 2 eat for lunch @ school I got at least 5 requests for the recipe. I am not kidding. Very delicious!

I made the recipe as directed, but realized at the last minute that I didn't have a muffin pan... That's when I discovered these are excellent as cookies as well :)

And I drizzled them with a little chocolate ganache, too, very tasty!

Perfect for getting rid of the pumpkin pie filling you bought when you meant to buy plain pumpkin! They turned out great! I also used 1/4 stick of melted butter with 1/4 cup cinnamon applesauce instead of a whole stick of melted butter.
I think the pumpkin pie filling ones turned out better than the plain pumpkin ones.

I made these with all-purpose flour instead of whole wheat (since I didn't have any) and used nutmeg, cinnamon and cloves since I didn't have any "pumpkin spice".. and they were delicious!! They're also really good with some walnuts mixed in with the chocolate chips. Yummy!
