NEW YORK CHEESECAKE 
2 lbs. ricotta cheese
2 (8 oz.) pkgs. Philadelphia cream cheese
1 1/2 c. sugar
6 eggs
1 tbsp. ReaLemon
1 tsp. real vanilla
3 tbsp. cornstarch
3 tbsp. flour
1/4 lb. melted butter
1 pt. sour cream
1 (10") spring form pan

1. Cream 2 cheeses in large bowl.

2. Add sugar slowly until blended.

3. Add eggs, one at a time, beating well after each egg is added.

4. While beating, slowly add lemon juice, vanilla, cornstarch and flour.

5. Add butter gradually.

6. Mix until smooth.

7. Add sour cream gradually.

8. Pour into greased 10" spring form pan.

9. Bake at 325 degrees for 1 hour, then turn off oven and let sit in oven for 2 hours. DO NOT OPEN OVEN DOOR.
